Tandoor-baked naan bread at Indian Bites Copenhagen – garlic naan from 30 DKK, baked to order

What makes tandoor-baked naan bread special?

The tandoor oven is the heart of any serious North Indian kitchen. It is a cylindrical clay oven, typically set into the ground or a counter, with a fire burning at the bottom and intense radiant heat rising up through the chamber. Temperatures inside a working tandoor reach between 400 and 480 degrees Celsius – far hotter than any domestic or commercial baking oven. That extreme heat is what makes tandoor naan categorically different from flatbread baked any other way.

When a round of naan dough is slapped against the interior wall of the tandoor, it cooks in just two to three minutes. The rapid, fierce heat creates a pressure differential inside the bread that causes it to puff up and blister. The side touching the clay wall picks up a faint char and a subtle smokiness. The outer surface sets quickly into a lightly crisped shell while the interior stays soft and airy. When the naan is pulled from the oven, it is brushed with butter and served immediately. This combination of textures – the crispness outside, the pillowy inside, the slight smokiness – is entirely a product of the tandoor. You cannot fake it.

At Indian Bites, we use our tandoor oven throughout every service, every day. It is not just for chicken and kebabs. The tandoor is central to how we make our bread, and we are proud of the quality it delivers. A naan from our kitchen is something worth ordering on its own terms – not merely as an accessory to the main dish.

Types of naan bread at Indian Bites

We offer three varieties of naan, all baked to order in the tandoor and served warm:

  • Garlic Naan – 30 DKK. Our most popular naan and one of the most-ordered items on the entire menu. The same light, fluffy tandoor dough, but brushed generously with melted butter and finely chopped fresh garlic straight out of the oven. The garlic melts into the warm bread and delivers an aromatic, savoury flavour that complements every curry we serve. We use fresh garlic – not powder – and the difference is unmistakable. If you are ordering naan for the first time at Indian Bites, start here.
  • Plain Naan. The classic, unembellished version. Soft, blistered from the tandoor, with a light brush of butter after baking. Plain naan is the purist’s choice and the right pairing when you want the flavours of the dish – a richly spiced dal, a delicate palak paneer, or a complex korma – to take full centre stage without competition from the bread. It is also the most versatile option for guests sharing multiple dishes around the table.
  • Cheese Naan. The most indulgent of the three. Cheese naan is filled before baking – the dough is wrapped around a layer of melted cheese and sealed, then baked in the tandoor until the exterior is golden and the filling is soft and stretchy. It works brilliantly alongside milder curries and is also popular as a satisfying standalone snack. If you are looking for something a little special or want to treat yourself, cheese naan is the answer.

All three varieties are made to order and served hot. There is no minimum order on bread – you can add a single naan to your meal or order several to share across the table. See all available options at indianbites.dk/menu/.

Pairing naan bread with curries

Naan was designed to be eaten with sauce. In the North Indian tradition, bread and curry are a complete meal together – the bread is the utensil, the vehicle, and the complement all at once. Choosing the right naan for the right dish makes a noticeable difference to the overall experience. Here are our recommendations:

  • Garlic naan with butter chicken (145 DKK). This is the definitive pairing. The creamy, tomato-butter sauce of murgh makhani and the fragrant garlic of the naan are perfectly calibrated to each other. The garlic cuts gently through the richness of the sauce, giving every mouthful balance and brightness. Tear off a piece, drag it through the sauce, and you will understand immediately why this combination is so beloved.
  • Garlic naan with dal tadka (125 DKK). Dal tadka – slow-cooked lentils finished with tempered spices – is one of the most satisfying dishes in Indian cooking. A garlic naan alongside it is the classic accompaniment: the soft bread scoops up the thick, earthy lentil sauce effortlessly, and the garlic aroma mirrors the warm spicing of the dal.
  • Plain naan with delicate vegetarian dishes. For lighter, more nuanced dishes such as palak paneer or a mild korma, plain naan is the better choice. The neutral flavour of the bread keeps the focus on the dish without introducing competing aromas from garlic or cheese.
  • Cheese naan as a standalone or with a mild curry. Cheese naan is rich enough to stand alone as a snack, but it also pairs wonderfully with milder main dishes. The creaminess of the melted cheese filling works in harmony with sauces that are gentle in heat but complex in spice.

The combinations above are starting points. North Indian dining culture encourages sharing, exploring, and mixing – and at Indian Bites, we actively encourage our guests to try things in different combinations and find what works best for them.
