Our head chef grew up in Punjab, the heartland of North Indian cuisine. Masala bases simmer for hours, marinades rest overnight, and naan is stretched by hand and baked in a genuine tandoor clay oven.
Spices imported from India
Kashmiri chillies, Himalayan black cardamom, long pepper, dried fenugreek and Kashmiri saffron – ground fresh in our kitchen, never bought pre-mixed. That is the depth of flavour guests call “the best outside India”.
